Mediterranean Greek Dip
Equipment
- Mixing Bowl
- Sharp Knife
- Skillet
Ingredients
- 1 Whole Cucumber With the seed removed and cut small
- 1 Whole Green Pepper Cut small
- ¼ Cup Cup Red Onion Minced
- 2 Long Celery Stalks Crisp, fresh and washed
- 1 Lb Tomatoes Campari or grarden tomatoes work well! Reserve the tomato juice for the dressing.
- ½ Lb Feta Cheese Block style or crumbles
Dressing
- ⅓ Cup Red Wine Vinagar your favorite brand
- ½ Cup Olive Oil extra virgin
- 10 Fresh Basil Leaves or 1 tablespoon dried basil. Christy's Greek Seasoning can also be used in place of basil.
- 1 teaspoon Parsley freshly cut or dried
- ½ teaspoon Sugar or more for desired taste!
Dippers
- 4 Whole Pita Bread small or large
- 2 tablespoon Olive Oil extra virgin
Instructions
- Peel and remove the seeds from the cucumber. Then dice into half into ½ cubes.
- Cut and remove the seeds from the green pepper and slice small.
- Mince the onion.
- Cut the tomatoes in small wedges and then in half and lightly salt them over. Keep the juices to add to the dressing.
- Dice the celery small
- Mix the dressing and the tomato juice in a bowl and stir well until completely blended.
- Combine the salad and dressing together. Cover with plastic wrap and place in a cool place to marinate for 30 minutes to 4 hours before serving.
