    Easy Hasselback Potatoes With Garlic Butter

    Looking for a unique way to serve potatoes? Here is a Swedish recipe to the rescue!  I love these easy Hasselback Potatoes because it's somewhat like a baked potato. It takes about the same amount of time but braised with garlic butter throughout the cooking process making them exceptionally delicious…..They are simple to make and your family will rave about them. The best part, you probably have the supplies on hand!

    This side dish has become a crowd favorite among friends and most surprisingly, my kids. It complements steak and chicken dishes beautifully and adds something special to an ordinary dish.

    This fun side dish originated at the Hasselbacken Restaurant and Hotel in Stockholm in the 1950s.

    Easy Hasselback Potatoes With Garlic Butter

    Super simple potato side dish. This unique way of serving potatoes will win you brownie points.

    Equipment

    • Baking Pan
    • Basting Brush

    Ingredients

    • 4-5 Potatoes I Prefer Using Red or White Potatoes
    • 1 Stick Butter or 8 tablespoons
    • 3 Cloves Garlic minced finely
    • ¼ teaspoon Salt and Pepper To Taste
    • 2 teaspoon Paprika any brand
    • 2 teaspoon Parsley dried or fresh

    Instructions

    • Scrub Potatoes to rid of debris.
    • Preheat oven to 425 degrees.
    • Melt one stick of butter for 40-60 seconds in the microwave.
    • Slice potatoes vertically with the cuts about ⅛ to ¼ inches apart. Cut down into the potato a little more than half way.

    • Place in baking dish.

    • Peel garlic cloves and mince. Add to the melted butter.

    • Salt and pepper the raw potatoes.
    • Sprinkle Paprika and Parsley onto the creation onto the potatoes.

    • Using a basting brush, generously brush the butter mixture over the potatos ensuring the minced garlic pieces are evenly applied. Then place in the oven, uncovered.

    • Set timer for 20 minutes as you will need to baste 2-3 times more depending on the size of the potato in 20-minute intervals. Smaller potatoes take less time.

    Notes

     
    My Potatoes were on the larger side and required 3 bastings until they were buttery soft on the inside and ready to serve. Do baste one last time before serving to the plate using the remaining butter mixture at the bottom of the pan.
