Easy Hasselback Potatoes With Garlic Butter

Super simple potato side dish. This unique way of serving potatoes will win you brownie points.

Ingredients

  • 4-5 Potatoes I Prefer Using Red or White Potatoes
  • 1 Stick Butter or 8 tablespoons
  • 3 Cloves Garlic minced finely
  • ¼ tsp Salt and Pepper To Taste
  • 2 TSP Paprika any brand
  • 2 TSP Parsley dried or fresh

Instructions

  • Scrub Potatoes to rid of debris.
  • Preheat oven to 425 degrees.
  • Melt one stick of butter for 40-60 seconds in the microwave.
  • Slice potatoes vertically with the cuts about 1/8 to 1/4 inches apart. Cut down into the potato a little more than half way.

  • Place in baking dish.

  • Peel garlic cloves and mince. Add to the melted butter.

  • Salt and pepper the raw potatoes.
  • Sprinkle Paprika and Parsley onto the creation onto the potatoes.

  • Using a basting brush, generously brush the butter mixture over the potatos ensuring the minced garlic pieces are evenly applied. Then place in the oven, uncovered.

  • Set timer for 20 minutes as you will need to baste 2-3 times more depending on the size of the potato in 20-minute intervals. Smaller potatoes take less time.

Notes

 
My Potatoes were on the larger side and required 3 bastings until they were buttery soft on the inside and ready to serve. Do baste one last time before serving to the plate using the remaining butter mixture at the bottom of the pan.
