Ingredients
½ to ¾CupOlive Oilextra virgin
2LbsBaby Potatoesred, white, or yellow!
1Tbsp Celery Seedground
1Tbsp Garlic Powder or minced garlic
1Tbsp Thyme
1Tbsp Parsleyor a few sprigs of fresh parsley, chopped.
Instructions
Preheat oven to 375 degrees.
Parboil baby potatoes in salted water. About 6 minutes.
Drain and put in a bowl.
The potatoes will be hot, drizzle olive oil and each seasoning, and toss to coat each potato in oil and seasoning.
Line baking sheet with aluminum foil
Pour potatoes with oil seasoning on the baking sheet.
Use the bottom of a cup to “smash” the potatoes.
Bake for 20-30 minutes in the oven until light golden in color.
