Combine the spices. Place salt, pepper, garlic powder, paprika, celery seed and cumin into a bowl and mix well.
Coat the chicken strips with the seasoning using your fingers, firmly pressing it into the meat.
Cut the pepper into strips and the onion into quarters and then into eighths. Also, mince fresh garlic.
Preheat a large skillet over medium heat and add the oil to the pan. Once the oil is heated, add the minced garlic and seasoned chicken to the pan. Cook each side of the chicken strips for 2-3 minutes, until no longer pink. Remove the chicken from the pan leaving the oil behind. Place the meat in a bowl and set to the side.
Add the cut peppers and onions to the oil and cook for 6 minutes, stirring occasionally.
Put the chicken back in the skillet with the vegetables, stir and cover. Stir occasionally for 8 minutes or until the chicken is fully cooked.Squeeze fresh lime over the chicken and stir again before serving (optional).
