Hungarian Beef Goulash (Instant Pot)

Do you have an Instant Pot? I have the best recipe for Hungarian Beef Goulash that is so flavorful, can be prepared in a little less than an hour in your Instant Pot, and your kids will rave about it!

Equipment

  • Instant Pot or other pressure cooker

Ingredients

  • 1 Tbsp  Olive Oil extra virgin
  • ¼ Tsp Salt or sea salt
  • ¼ Tsp Black Pepper ground
  • 2 Lbs Stew Beef or Bottom Round Steak cut into bit sized 1 ½-inch pieces
  • 1 Small Onion diced
  • 1 Whole Green Pepper diced
  • 3 Tbsp  Paprika divided
  • 1 Cup Beef Broth low sodium
  • 1 Can Diced Tomatoes 14.5 ounces
  • 1 Bag Extra Wide Egg Noodles cooked using the package directions
  • 2 Tbsp Cornstarch your favorite brand
  • 2 Tbsp Water luke warm

Instructions

  • Season the beef with 1 tablespoon paprika, salt and pepper. Use the saute mode on your Instant Pot and add the oil. Once heated, brown the beef on each side and then remove and set aside. About 5 minutes. This can also be done in batches.

  • Add the butter, onions and peppers to the pan and saute for 5 minutes or until soft. Remove and set aside once done.

  • Deglaze the pot using beef broth and scrape any beef residue and crumbs stuck to the pan free. Place a trivet in the Instant Pot pan.

  • Add the beef, peppers, onions, remaining paprika, beef broth and tomatoes to the Instant Pot. Lay the beef on the trivet and the other ingredients on top.

  • Seal the pressure cooker and turn the dial to “seal” it closed. Use the high pressure cook mode and set the time for 30 minutes. Takes about ten minutes to preheat.
  • Remove the trivet and stir. Adjust the pressure cooker to saute.Make a slurry of water and cornstarch and stir into the goulash to thicken.

Notes

Because of my children, I use a sweet Paprika rather than the smoked variety. Please use what you see as fit for your family.
